Ingredients:
2 cups cooked jasmine rice (day-old preferred)
1 lb medium shrimp, peeled and deveined
3 large eggs, beaten

3 cloves garlic, minced

Instructions:
Heat 2 tbsp olive oil in a large skillet over medium-high heat

Remove shrimp and set aside
Add remaining oil, scramble eggs and remove
Add garlic, bell pepper, and peas. Stir-fry for 2 minutes
Add rice, breaking up clumps. Stir-fry for 3-4 minutes
Return shrimp and eggs to pan, add soy sauce and green onions
Toss everything together and serve hot
